Turning A Small Cafe Space into a Bustling Restaurant

Lagoon Dining is the second hospitality shop fitout that Canopy have completed for Olaver Architecture with whom we had worked with previously on Gontran Cherrier shop fitout project. 

Lagoon Dining aimed to bring a different flavour to the traditionally Italian dining scene in Carlton. This shop fitout provided many challenges for us at Canopy, as the previous tenancy was a small cafe that required to be upgraded to a complete commercial kitchen restaurant. The timeline allowed for the tenant occupancy within 10 weeks from commencement, creating a tight deadline from the get-go.

One of our first key tasks for this shop fitout was to commence applications for the upgrades required on the gas metre, this involved an 8-week application through AGL. Whilst waiting for this process, the second challenge to the tenancy was to remove the smaller grease trap for a much larger grease trap that is required for the larger commercial kitchen to be fitted. This involved a cut out of a 2-metre-deep hole to the rear of the tenancy, to allow for a 1200 litre grease trap.

Another major challenge we faced was installation of a large canopy, which was required to cover the entire kitchen cooking facilities. This included two large extraction fans to penetrate through the concrete slab of the first floor and out through the above ceiling. It was essential for the removal of exhaust fumes from the kitchen appliances, this provided a design challenge for our architect and engineer as a large penetration required additional steel support due to the substantial hole needed for the exhaust duct.

Due to the requirement of dining seating on the ground and first floor, Olaver Architecture provided a solution to allow for adequate storage and to hide the sight of the mechanical exhaust duct. They achieved this by creating large, tall storage cabinets that would seek to kill two birds with one stone.

As operating with a tight deadline confines working spaces, we were so grateful to have our amazing extended Canopy family go above and beyond, to make certain we ensured delivery of this breathtakingly designed restaurant for their opening launch.

Costs are agreed upon in this stage and the outline of the project is discussed including timelines. We will organise all relevant permits to be approved and issue you with a final Construction Set, Fixtures and Finishes Schedule and a Project Schedule.

We carefully source and recruit the right contractors for each fitout construction job. We work with our team of Designers and suppliers to ensure consistency across the look and feel of the project, and conduct weekly site visits with you so you can check in on the agreed design and look of your fitout, and see how it’s all coming together.

At completion, we handover to you after ensuring you’ve had a thorough walk through of the new space and make sure you are happy with your completed project. We continue to work with you to take care of any additional needs and ensure they are resolved in readiness for your relocation.
