Oregano's Bakehouse has built its following the old-fashioned, organic way — through handmade pastries, traditional Lebanese recipes, and a warmth that no amount of marketing can manufacture.
After earning a loyal community following at their original Epping location, the team were ready to grow. Their second store in Wollert called for a fitout that could carry the same brand story into a new neighbourhood. A space that felt unmistakably Oregano's from the moment customers walked in, while performing as a high-volume retail and café operation from day one.
A Unique Design Concept
We approached this project through the lens of "Modern Heritage,” a concept that shaped the design foundation for the entire build. The tension between old-world craft and contemporary retail informed every material selection, every finish, and every spatial decision. Neither side was allowed to compromise with the other.
Rich timber tones and earthy textures form the backbone of the interior, communicating artisanal quality at a glance and establishing an immediate sense of place, well before a single pastry is in view.

The Counter as a Hero Piece
At the centre of the space sits a custom-engineered curved service counter, the fitout's defining feature. The curve does real work here: it softens the room, naturally directs customer flow, and removes the hard edges that can make retail environments feel transactional. Frameless glass displays, inset directly into the cabinetry, present the pastries as the focal points they deserve to be - beautifully visible, completely unobstructed, and impossible to walk past.

Depth in Every Direction
High black ceilings create an unexpected industrial canopy over the warm timber palette below - adding volume, depth, and a quiet theatricality to the space. Minimalist black handles and hardware run throughout, offering a sharp modern rhythm that keeps the design from tipping too far into the rustic.
It's a contrast that works precisely because it's controlled. The warmth draws people in; the drama makes them remember it.
